My ideal faire would tend to favor the arts. Ephasis on music, theatre, so there would be lots of stages with music shows and plays. Lots of lane performers. Lots of enchanted forests with fantasy characters. In the lanes, colorful characacters that fill us with wonder and cause kids and adults to laugh and hearts to fill with wonder. Drunken priests, professional insulters, faerie folk, and saucy wenches interacting with patrons. Smee and Blog would certainly be there. Axel the Sot. Merriment and revelry would be emphasized. Exhibitions of a violent nature would be minimized, and very theatrical, even comical. After closing gate, there would be special concerts, some of which would include "plugged in" sets with the band playing original and traditional tunes, but with perhaps an electric guitar or some such. Stages would be built for sound, i.e., back and side panels to push the sound forward instead of having it dissipate in the wind. Every stage would have a weatherproof "keep" for musicians to stow their instruments in. There would be facities for performers, who also have to live "after hours". Good campgrounds, trailers, or permanent living quarters, with hot showers and washing/drying machines available to all. Performers would be well paid and never *ever* have to pay for a meal!
